Suz Strawberry Cake

Homemade 6 layer Strawberry Vanilla Cake!! 6 layers of fluffy vanilla cake with homemade strawberry icing layered in-between all topped with homemade whipped creme!!


Cake

8 ounces butter softened

3 1/4 cups cake flour

1 tablespoon baking powder

1/2 teaspoon salt

2 1/2 cups sugar

2 teaspoons vanilla extract

4 eggs

1 1/4 cups milk


  1. Have eggs and butter at room temperature. Preheat oven to 350. Spray four 8-inch or three 9-inch pans generously with baking spray. *cut circles of parchment paper to fit pans and place one in the bottom of each pan. Spray again

  2. Sift flour, baking powder, and salt together; set aside.

  3. Beat butter and sugar in bowl of electric mixer until light and fluffy

  4. Add vanilla and then eggs one at a time, beating after each addition.

  5. Add flour mixture and milk alternately in 3 batches, beating until smooth after each addition.

  6. Divide batter between pans. Bake until golden (~30 mins). Let cool on racks. Slice dome off of cake.

Strawberry Icing

1 Stick of butter

6 (ish) cups of powedered sugar

*8 oz of frozen sliced strawberries


*frozen slices strawberries come in a carton from the grocery store, do not use your own strawberries


  1. Have butter at room temperature. In a mixing bowl combine strawberry juice and butter and beat until smooth.

  2. Add powdered sugar (continue adding until light and fluffy)

  3. Slice dome off of the cake and slice caake layers in half.

  4. Icing each layer

Whipped Creme

1 pint of whipping creme

1/4 cup of powdered sugar


  1. Combine 1 pint of whipping cream and 1/4 cup of powdered sugar and whip on high speed until fluffy- Cover the cake in thick whipped creme covering then refrigerate until ready to serve
