Susu's Vanilla Cream Cheese Brownies

3 rolls of pre-made cookie dough

2 packages of cream cheese

2 eggs

3/4 cup sugar

1 Tbs vanilla


  1. Pre-heat oven to 350

  2. Spray pan with non-stick spray. Open the first package of cookie dough and flatten the dough to the bottom of the pan, cover the bottom of the pan (I usually use 1 1/2 of my rolls- to ensure full coverage and thickness)

  3. In a mixer bowl, combine the room temperature/ softened cream cheese and eggs. Mix well. Add sugar to the cream cheese mixture. Then add in vanilla. Beat until smooth.

  4. Layer the vanilla cream cheese mixture on top of the cookie base. With the remaining 1 1/2 rolls of cookie dough, flatten the dough in your hands to create a sheet to place on top of the cream cheese mixture (create a large cookie sandwich). Try to cover all of the cream cheese but it's okay if not.

  5. 5. Place in oven at 350 for 25 minutes (do not overcook- should be gooey)

  6. Let cool then refrigerate for 6 hours before serving. I think they are best when cold- Keep cool till serving!
