Snickerdoodle Blondies

Fluffy blondie brownies with a cinnamon sugar coat that taste just like snickerdoodles!

Batter

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

12 tablespoons (1 1/2 sticks) unsalted butter, melted and cooled

1 cup packed brown sugar

1/2 cup granulated sugar

2 large eggs

1 1/2 teaspoons vanilla extract


Filling/Topping

1/3 cup granulated sugar

2 teaspoons cinnamon


  1. Preheat oven to 350°F and line a 9x9 baking dish with parchment paper on the bottom and up the sides.

  2. In a small saucepan or in the microwave, melt butter and let it cool slightly.

  3. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.

  4. In another bowl, whisk together the cooled melted butter, brown sugar, and sugar until combined. Add in 2 eggs and vanilla extract and beat to combine.

  5. Add in the dry ingredients to the wet ingredients and gently fold with a rubber spatula until smooth and combined.

  6. In a small bowl, combine 1/3 cup sugar and 2 teaspoons of cinnamon for the filling and topping. Set aside.

  7. Spread half of the batter into the lined dish, then sprinkle most of the cinnamon-sugar mixture on top, saving about a tablespoon or so for the topping. Spread the remaining batter on top and then sprinkle with the remaining cinnamon sugar.

  8. Bake for 30-35 minutes or until golden brown on top but still soft in the center. Do not over-bake or the blondies will be dry. Remove from the oven and let them cool completely before slicing. Enjoy!
