Pumpkin Chocolate Chip Muffins (with Vanilla Cream Cheese Icing)

One box of Trader Joes Pumpkin bread mix

(for mix)

2 eggs

1/2 cup ofVegetable oil

1 cup of water

** 1-2 cups chocolate chips

Icing:

4 oz of cream cheese

6 cup of powdered sugar

1 tsp vanilla

1)Preheat oven to 400 degrees. Line 2 dozen muffin pans with liners

2) Mix Pumpkin bread mix. **Add in chocolate chips- evenly distribute mix into liners

3) Bake for 20 min - remove and cool fully

Icing:

4) In standing mixer- whip cream cheese on high until whipped

5) add in vanilla

6) gradually add in powdered sugar until desired thickness

7) scoop into piping bag (or zip lock bag) and pipe onto cooled muffins
