Buck Eye Crispy

4 cups of smooth Peanut butter
4 cups of confectioner sugar
1/2 cup melted butter
4 cup crispy cereal
1 bag of melting chocolate (or choc chips)
* topping
** coconut oil to thin chocolate drizzle
Combine peanut butter, confectioner sugar, butter, and crispy into a large bowl. Mix (with spatula or spoon) until well combined.
Hand roll mixture into inch thick balls. Place mixture on parchment paper on a pan. Freeze for 30 min.
Melt chocolate in a double boiler to melt.
* add coconut oil to the thin chocolate mixture if hardens
4. Once the peanut butter mixture is frozen, roll it in the chocolate mixture till covered, place it back on the pan to cool.
**top with sprinkles or topping
5. Freeze for 1 hour then serve. Refrigerate to store
