Breakup Cookies

Fluffy sweet and gooey on the inside! These easy to store chocolate chip cookies are great to have in the fridge for a last-minute dessert or sweets craving!


INGREDIEENTS

2 cups minus 2 tablespoons cake flour

1 2/3 cups bread flour

1 1/4 teaspoons baking soda

1 1/2 teaspoons baking powder

1 1/2 teaspoons coarse salt

1 1/4 cups unsalted butter (2 1/2 sticks)

1 1/4 cups packed light brown sugar

1 cup plus 2 tablespoons granulated sugar

2 large eggs

2 teaspoons natural vanilla extract

3 cups of chocolate chips


*butter and eggs room temperature


  1. Preheat oven to 350°F.

  2. Sift flours, baking soda, baking powder and salt into bowl. Set aside

  3. Using a mixer, cream together butter and sugars until very light and fluffy (about 5 mins)

  4. Add in eggs, one at a time, mixing well after each addition.

  5. Add in Vanilla, mix well

  6. Gradually stir in, in 3 batches flour mixture, mixing well after each addition

  7. Add in chocolate chips

  8. Freeze for an hour then bake for ~8 min

INGREDIENTS

*hand roll chocolate chips and place on parchment paper and store in freezer

** this recipe makes A LOT of cookies, I keep pre-made cookies in the freezer so I can just pop them in the oven when needed! Enjoy!!
